Teas 13 Pu-Erh This kind of tea has been produced for at least 800 years. It comes from a variety of tea plant with unusually large leaves, growing up to 30 metres tall. Pu-erh is exceptional not only for its aroma and beneficial effects, but also for its unique production method. Green teas from the summer harvest are first steamed and treated with fungal cultures, then typically compressed into small shapes. The teas are stored in this form in a cool environment for several months or even years. During this time, they mature and develop their distinctive musty, earthy aroma.
