14 Teas Green Teas Only the first two leaves and a bud are picked for the finest green teas. Great care is taken not to damage them, as even slight bruising can cause oxidation - a process that’s essential for black tea, but intentionally avoided when making green tea. The leaves are briefly heated or steamed, then rolled and dried. High-quality green tea is recognised by its fresh, hay-like aroma. The leaves should be green rather than brown, slightly glossy, dry, and firm. Because green teas are not oxidised, they retain a high level of antioxidants - polyphenols, which neutralise free radicals in the human body. The polyphenols in green tea help protect the body by slowing down cell ageing and reducing the risk of various diseases. Pure Green Tea China Tea originated in China, where it has been known for over 2,000 years. Although it is now cultivated in many parts of the Orient, China remains the world’s largest tea producer and exporter. Tea is deeply rooted in Chinese culture, and thanks to the country’s location and favourable climate, a wide variety of teas continue to flourish here.
