22 Teas Oolong Oolong is a semi-fermented tea that combines the best qualities of green and black tea. Typically, three leaves and a bud are picked, then withered under the sun for about an hour to initiate light oxidation. For certain types, the leaves are shaken in bamboo baskets to enhance oxidation and release their juices. Once the edges begin to turn red, the oxidation is halted through drying. The leaves are placed in drums and dried at around 70°C for about 45 minutes - a higher temperature than used for most other teas. While still hot, the leaves are wrapped in cotton cloth and kneaded and rolled for about 20minutes, then dried again. Depending on the variety, this process can be repeated up to ten times. Oxidation is complete when the edges are black but the centres remain green. The final step is rolling and charcoal drying. Oolong tea supports heart health, strengthens the circulatory, digestive, and immune systems, and - like other teas - provides natural antioxidants along with vitamins B2, C, and E. Pure China Chinese oolongs include a range of flavours that give the tea a distinctive note and elegant aroma. The longer oxidation process is among the more flavourful.
