Teas 25 White Teas As a legacy of teas once reserved exclusively for the Emperor and his court, white teas still carry a mark of quality and rarity. Their production is highly specific: the unopened leaf buds are carefully plucked, left to wither to allow moisture to evaporate, and then gently dried. The buds retain their silvery-white appearance - known as “Silver Tips” - and produce a bright, refreshing, and exceptionally sweet infusion. Some white teas are also hand-rolled into various shapes. The cradle of white tea is China’s Fujian Province, where it was traditionally made from the Da Bai variety, meaning “great white.” Only in recent years has white tea started to be produced in other regions, including Darjeeling, Sri Lanka, Africa, and Hawaii.
