After harvesting, the plants are tied into bundles, cut to the desired length, crushed, and then left to oxidise. This process results in red rooibos, known for its characteristic honey-like flavour. If oxidation and crushing are skipped, green rooibos is produced, offering a more herbal taste. Rooibos is graded according to leaf size, colour, and flavour profile.
